The Affinity on Eggs!
ooohhh -weeee! This is a delicious one! And so easy!
Hi everyone! This is the very first blog entry for The Scullery and I am here for it! My goal in starting this business was to have products that actually help make our lives easier when it comes to cooking. I mean, we have to eat every day, 3 times! That is a lot of decision making! When we really just want to be out (or in!) enjoying our lives and not feeling prisoner to the feeding. Anyone feel me out there? I hear you, yes, you definitely do! So, I plan to help you see all of the amazing ways you can you use your new products besides just tacos and chili! Although, there will be tacos. I mean, tacos! We can’t leave those out!
The other morning, we woke up and decided to amble into the kitchen and make breakfast, not a smoothie, but breakfast breakfast. We still are inundated with tons of tomatoes from our garden. I have been making all kinds of things with them on the fly. They are yellow cherries and the red ones that are bigger than cherries, but not as big as a Roma. Any of you that have grown the smaller types of tomatoes are in the know of the mass amounts of tomatoes you will need to find homes for. The other day I had an idea to just take a bunch of them and grill them and then stick them in the fridge to use whenever. I just covered them in olive oil, salt and pepper, threw them on a skewer and grilled them until they showed some charring, about 10 or 15 minutes give or take. It is better to eye it, then time it. So, when it was time to make breakfast, I thought, I am going to stick these in the grits! I have always loved shrimp and grits, so this was sort of similar, sans the shrimp because I had none and I wasn’t going to the store before breakfast, nope, not happening. Although, if you have them, add them to this, because that would be amazing! The grits are just salt, pepper, garlic granules, butter and as much of the grilled tomatoes as you see fit. They will add volume to your grits, so take that into consideration when you are deciding how much to make. Besides that, I cooked up some Hickory Nut Gap breakfast sausage in the cast iron and Shannon, the egg master, cooked up some deliciously runny eggs. We stacked it all neatly in some bowls and covered it with The Affinity - our cilantro jalapeño sauce. It brightens the whole thing up and adds just a slight amount of heat. It is somewhat similar to a smooth salsa verde. It is so good on eggs and well, so much more, but we will get to that on a later post. If you happen to have The Longing, our Habanero hot sauce, as well, I wouldn’t be afraid to add a couple drops of that as well! i have also been known to add The Obsession, our Chipotle hot sauce, to grits with amazing results.
Good thing I thought to take a picture, because this was gone in a matter of minutes!
You can use Romas or cherries you buy from the store year round. I would also think that roasting the tomatoes would be good too, but the grill flavor is the best in my opinion.
